Spiced Lentil Soup Recipe
1 cup dried lentils, rinsed
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground turmeric
1/2 teaspoon smoked paprika
6 cups vegetable broth
Salt and pepper to taste
Fresh lemon juice (optional)
Cook onions, carrots, and celery in a large pot until soft.
Combine the minced garlic with the cumin, turmeric, and smoked paprika. Continue cooking for two more minutes.
Put lentils and vegetable broth into a pot. Boil lentils for 30 minutes, then reduce heat and simmer for another 25-30 minutes.
Add salt and pepper to taste.
Fresh lemon juice can be squeezed before serving for a burst of flavor.
